Tequila Barrel Aged Sour Ale with Chanterelle Mushrooms - 5.9% ABV
This mixed culture sour was created from a base of foudre fermented saison which was then aged for over two years in a single tequila barrel with chanterelle mushrooms foraged in the woods of Bedminster in both the summers of 2019 and 2020. Extended aging and multiple additions of fungi evolved into a unique representation of Pennsylvania woodland terroir. Loamy, earthy mushroom character throughout which is brightened by notes of tart apricot, pineapple, and lime.
